Vincent is a very calm and direct man, speaking only when necessary and with short, sensible sentences that serve to intimidate those around him, especially his employees, in particular Rody. Publicly, he presents himself as an educated, charismatic and successful chef, masking the darker aspects of his personality. Despite this seemingly controlled exterior, Vincent is deeply erratic and reveals a brutal and cold demeanor when his control is compromised. His unstable personality reaches the point of being homicidal, as he kills Rody's girlfriend and uses her remains to create a new dish. Vincent's short temper is evident in an incident in which he angrily presses the face of one of his chefs against a hot stove for not strictly following his instructions.
